We have an in-house research institute dedicated entirely to investigating the cycles of nature and deeply understanding our surroundings. We work with seasonal and local ingredients, which allows us to create menus with a low carbon footprint. This choice reflects a commitment to local producers, ethical practices and fair socio-environmental processes.
Rainwater Harvesting
Our restaurant is designed to collect rainwater, which is reused to irrigate our garden and clean the outdoor areas. The beams covered in reforested pink eucalyptus on the roof were specially designed to collect rainwater, which is stored and used later. An intelligent cycle that reduces waste and enhances natural resources.
Conscious Waste Management
We adopt selective collection, composting and biodigester to ensure the correct and responsible disposal of all waste generated. By doing so, we minimize our environmental impact and promote a cleaner and more efficient operation.
Air-purifying hood
Our dining room is home to the only filtering hood in Brazil, an innovation that purifies the air inside and returns it to the atmosphere cleaner than when it entered. It is a way of giving back to the environment, raising the standard of well-being inside and outside the restaurant.
Sustainable Stationery
All of our printed communications are made with recyclable paper, reusable eco-bags and seed paper — a 100% biodegradable material that turns into plants and vegetables when placed in the soil. Each message literally becomes a seed for the future.
